We are finally into Spring and it feels great! The Cheale Meats farm is always busy at this time of year and it is a wonderful season! At this time of year we often change the way we eat slightly, in that we tend to reach for fresher, lighter foods. Our Spring recipes are full of seasonal items and of course, our delicious pork!
Our Pork Skewers are a light, fresh meal that everyone will love!
To Serve 4
- 500g of boneless pork loin, cut into cubes
For the marinade:
- 1 x tbsp soy sauce
- 1 x tbsp honey
- 1 x tsp English mustard
- 1 x tsp chilli flakes
- 1 x tsp garlic powder
- 1 x tsp tomato puree
- salt/pepper to taste
Combine all of the ingredients for the marinade and coat the pork well. Cover in the fridge to marinade as long as you can before cooking – up to 24hrs.
You can make these on a BBQ but if you can only use an oven that works well too. Take the pork out of the fridge and start placing the pork on skewers. If you want to add vegetables we love using red pepper, onion, courgette & green peppers. Turn your grill to medium and place skewers on a grill pan. Turn them every 3-4 minutes ensuring they don’t burn. It should take around 15 minutes or until cooked through. Serve with a fresh salad – we love watercress, rocket and spinach with cucumber and tomatoes.
