Cheale Meats Hearty Pork Meatballs with Penne Pasta

The nights are drawing in and the fire is on – which means winter is upon us! We love this season and we particularly love the food that is part of it! It is definitely all about hearty, filling and warming meals. Here at Cheale Meats we have some firm favourites for quick and easy meals and one of them is our pork meatballs with penne pasta:

To serve 4

  • 350g pork mince 
  • 1 x finely grated carrot
  • handful of grated parmesan
  • 50g of stale breadcrumbs (leave the end of a baguette to harden)
  • 1 x finely chopped green chilli
  • 1 x tsp smoked paprika
  • 1 x tsp garlic powder
  • 1 x egg 
  • 2 x tin of tomatoes
  • 1/2 x finely chopped red onion 
  • 30g of tomato puree
  • 1 x cup of mushrooms 
  • extra virgin olive oil 
  • salt & pepper

Combine pork mince, carrot, breadcrumbs, chilli, paprika, garlic powder and the egg in a bowl. Roll into meatballs and set in the fridge on a baking sheet for 30 mins if you have time. This will keep them together when cooking. To cook the meatballs, either shallow fry until golden brown in a heavy bottomed frying pan or bake in the oven.

Whilst the meatballs are cooking, prepare your sauce. Fry the chopped onion in extra virgin olive oil and then add the mushrooms with some salt and pepper. Add the tomato puree and fry off for a minute or so. Add the tinned tomatoes and a pinch of sugar. Gently simmer and then add your meatballs to it when ready. Let them cook gently for about 10 -15 mins whilst cooking your penne pasta. Serve with freshly grated Parmesan and a side salad. Delicious!
